Method
Get ready with the flaxseeds, dry coconut, dry red chillies, garlic, cumin and tamarind. Peel the garlic and remove the chilli stems.
Dry-roast the flaxseeds in a kadai on low flame for 3 to 4 minutes. Stir often until they crackle lightly and give a nutty smell. Transfer them to a plate and cool.
Dry-roast the dry coconut, red chillies, garlic and cumin in the same kadai on low flame for 2 to 3 minutes. Stir until the coconut is lightly golden and the garlic loses its raw smell. Add the tamarind for the last 30 seconds, then cool everything fully.
Add the roasted flaxseeds, roasted coconut mixture and salt to a mixie. Pulse in short bursts until you get a slightly coarse powder. Do not grind for too long, or the flaxseeds may release oil and turn sticky.
Transfer the chutney to a clean bowl and mix once. Serve it dry with dosa or rotti, or mix 1 to 2 tablespoons with hot rice and a little oil or ghee.
