Method
Get ready by peeling and cutting the potatoes into medium cubes. Chop the onion, tomatoes and coriander leaves. Slit the green chillies and keep the ginger garlic paste ready.
Heat the oil in a kadai on medium flame for 1 minute until warm. Add the cumin and asafoetida, and fry for half a minute until the cumin sizzles.
Add the onion and green chillies. Fry on medium flame for 5 to 6 minutes until the onion turns light golden. Add the ginger garlic paste and fry for 1 to 2 minutes until the raw smell goes.
Add turmeric, red chilli powder, coriander powder, tomatoes and salt. Mix and cook on medium flame for 7 to 8 minutes until the tomatoes turn soft and the oil starts to show at the sides.
Add the potato cubes and water. Mix well and bring the curry to a boil on high flame for 3 to 4 minutes.
Cover and cook on low flame for 12 to 15 minutes until the potatoes are cooked through and can be pressed easily with a spoon. Add the garam masala and mix gently.
Add the coriander leaves and simmer uncovered on low flame for 2 minutes until the gravy reaches the thickness you like. Serve hot with rice, roti or chapati.
