Method

  1. 1

Wash the raw mango and dry it fully with a clean cloth. Cut it into small pieces with some flesh attached to the seed, and discard the loose seed pieces. Spread the mango pieces on a dry plate for 10 minutes until there is no surface water. Peel the garlic, and grind the mustard seeds coarsely and the fenugreek seeds separately to fine powders.

  2. 2

Mix salt, powdered mustard, red chilli powder, turmeric and powdered fenugreek in a completely dry bowl. Add the peeled garlic and mango pieces, then mix well until every piece is coated.

  3. 3

Heat the gingelly oil on low flame for 2 to 3 minutes until it is warm but not smoking. Switch off the flame and cool the oil fully for about 10 minutes.

  4. 4

Pour the cooled oil over the mango mixture and mix with a clean, dry spoon. The spices should become moist and coat the mango without leaving dry powder at the bottom.

  5. 5

Transfer the pickle to a clean, dry glass jar and press it down gently. Close the jar and keep it in a cool, dry place for 1 day so the mango softens and the oil rises to the top.

  6. 6

Open the jar after 1 day and mix the pickle once with a dry spoon. Close it again and keep it for another 2 days until the mango pieces soften and the raw spice smell reduces.
