Method

  1. 1

Get ready by peeling and finely chopping the onion. Wash the brinjals, green chillies, curry leaves and coriander leaves. Cut the brinjals into small cubes, slit the green chillies, break the dry chilli and finely chop the coriander leaves. Keep the brinjal cubes in the soaking water until needed so they do not darken. Pat the curry leaves dry so they do not splutter in hot oil.

  2. 2

Heat the oil in a kadai on medium flame for 1 minute. Add the mustard seeds, urad dal and broken dry chilli. Fry for 1 minute until the mustard seeds splutter and the dal turns light golden. Add the curry leaves and fry for 1 minute until crisp.
