Method

Marinate the chicken liver with all the marination ingredients for at least 15 minutes.

Heat gingelly oil in a pan and add fennel seeds. When they start to splutter, add curry leaves, green chilli and shallots.

When the shallots turn translucent, add the ginger garlic paste and saute until the raw smell disappears, around 1-2 minutes. Add the marinated chicken liver and saute on high heat for 2 minutes. Reduce the flame to medium and continue cooking for 8 to 10 minutes or until the liver is cooked. Keep stirring occasionally.

I've cooked this recipe multiple times and it's turned out fantastic every single time. I like a little more punch from the spices. Along with fennel seeds I've also added two Cloves and a small chunk of Cinnamon
