Method
Get the ingredients ready. Peel and finely chop the onion, and wash and cut the potato and carrot into small dice. Chop the coriander leaves and slit the green chillies. Rinse the medium-thick flattened rice quickly with water until slightly soft, then drain it well so it is not wet or mushy.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the peanuts and fry for 3 to 4 minutes until light golden, then remove them to a plate. Add the cumin and green chillies to the same oil and fry for 30 seconds until the cumin darkens slightly.
Add the onion, potato, carrot and green peas. Stir and fry on medium flame for 4 to 5 minutes until the onion turns soft and the vegetables start to cook.
Add turmeric powder, salt, sugar and water. Cover and cook on low flame for 7 to 8 minutes until the potato is cooked through and the water is almost gone.
Add the rinsed flattened rice, garam masala and the fried peanuts, and mix gently. Cook on low flame for 3 to 4 minutes until it is hot and the grains are separate, then switch off the flame.
Add the ghee, coriander leaves and lemon juice. Mix gently and serve hot.
