Cookd masalas for raw mango
Method
Peel the raw mango and grate it. Mix in the salt and leave for 10 minutes. Squeeze the grated mango with your hands and throw away the water.
Put the squeezed mango and sugar in a heavy steel pan. Stir on low flame for 6 to 8 minutes until the sugar melts into a syrup.
Simmer on low to medium flame for 12 to 15 minutes, stirring often, until the syrup is sticky and a drop pulled between two fingers makes one thread. Do not cook longer or it will turn hard when cool.
In a small pan, dry roast the cumin on low flame for 1 minute until it smells nice. Crush it coarsely.
Switch off the mango pan and let it cool for 10 minutes. Stir in the Kashmiri red chilli powder and the crushed cumin.
Cool fully. It thickens as it cools. Fill into a clean, dry glass jar. Serve with thepla, paratha or khichdi.
