Method

  1. 1

Get ready by wiping the kadai and mixie jar fully dry. Pick the curry leaves, rinse them, and pat them completely dry before frying. This takes about 3 minutes.

  2. 2

Dry-roast the chana dal in a kadai on low flame for 7 minutes. Stir often until it turns golden brown and smells roasted. Remove onto a wide plate.

  3. 3

Dry-roast the urad dal in the same kadai on low flame for 3 minutes until it changes colour and smells roasted. Add the dry coconut and roast for 1 minute until lightly coloured. Remove onto the plate.

  4. 4

Heat oil in the kadai on low flame for 1 minute. Fry the dry red chillies and curry leaves for 1 minute until the chillies are puffed and crisp and the leaves are dry. Do not let them turn black; remove onto the plate.

  5. 5

Cool all the roasted ingredients on the wide plate for 10 minutes until they are no longer warm to touch and fully dry.

  6. 6

Grind the cooled roasted ingredients with tamarind, jaggery, salt and asafoetida for 2 to 3 minutes. Stop once or twice and grind to a coarse or fine dry powder as you like. Do not add water.
