Method
Peel and grate the bottle gourd. Taste a small raw piece first: do not use it if it is bitter.
In a big bowl, mix the wheat flour, besan, grated bottle gourd, ginger green chilli paste, turmeric powder, red chilli powder, ajwain, sesame seeds, sugar, salt, coriander leaves and 2 tbsp oil.
Add the curd and knead into a soft, semi-stiff dough without water. Add 1 tsp water at a time only if it is too dry. Cover and rest for 15 minutes.
Divide the dough into 12 balls. Dust each ball with a little wheat flour and roll into a thin 6-inch circle.
Heat a tawa on medium heat. Cook a thepla for 30 seconds until small bubbles come, then flip. Spread a little oil, flip again and press with a spatula. Cook for 1 to 2 minutes until both sides have light brown spots.
Cook all the theplas the same way, about 2 minutes each, and stack them so they stay soft. Serve warm with curd or pickle.
