In a pan over medium heat add the fig and sugar. Keep mixing it until the sugar fully dissolves. Keep stirring until the fig is cooked throughout and soft.

Add the vinegar, lemon juice and mix properly. Optionally add thyme and mix throughout. Finish off with salt and store it in an airtight container.
