Cookd masalas for maida
Method
Combine maida, rava and salt in a bowl. Add 2 tablespoons of oil and rub it into the flour until it looks crumbly. Add water little by little and knead for 5 minutes into a firm, smooth dough.
Divide the dough into small balls. Press each ball on the back of a fork or a clean bamboo comb and roll it gently to make a shell shape. Keep the shaped gavvalu covered so they do not dry out.
Heat the oil for deep frying in a kadai on medium flame for 3 to 4 minutes. Drop a small piece of dough into the oil; it should rise slowly with small bubbles. Deep fry the gavvalu in 3 batches on low to medium flame for 5 to 6 minutes per batch, turning them until crisp and light golden. Drain on a plate.
Add jaggery and water to a kadai and heat on medium flame for 4 to 5 minutes. Stir until the jaggery melts, then strain the syrup to remove any dirt. Return the syrup to the kadai.
Boil the syrup on medium flame for 4 to 5 minutes until it reaches a sticky one-string consistency. To check, cool a drop between your fingers; it should form one thin string. Mix in the cardamom powder and switch off the flame.
Add the fried gavvalu to the hot syrup and mix gently for 2 to 3 minutes until every piece is coated. The syrup will start sticking to the shells.
Spread the coated gavvalu on a plate and cool for 20 minutes until the syrup sets and the pieces separate. Store them in a dry, airtight container.
