Method
Get the vegetables ready. Peel and dice the boiled potato. Peel and finely chop the onion; wash and dice the cucumber; wash, deseed and chop the tomato. Finely chop the green chillies and coriander leaves, then add all of them to a large bowl.
Dry roast the puffed rice in a wide kadai on low flame for 2 to 3 minutes, stirring often until it feels crisp. Spread it on a separate plate and let it cool for about 5 minutes.
Mix the mustard oil, lemon juice, chaat masala, cumin powder, red chilli powder and salt in a small bowl for 1 minute. Stir until the salt is mixed well.
Add the cooled puffed rice, roasted peanuts and sev to the vegetables. Pour the mustard oil mixture over them and mix gently for 1 to 2 minutes until everything is evenly coated.
Serve the jhalmuri at once. It is ready when the puffed rice is still crisp.
