Method
Peel the potatoes. Cut them into very thin slices, then into thin matchsticks, or shred them on the large holes of a grater. Drop them into a bowl of the water as you cut.
Rinse the potatoes in fresh water 2 or 3 times until the water runs clear. Drain and spread them on a clean cloth for 10 minutes until fully dry.
Heat the mustard oil in a kadai on high heat for 3 to 4 minutes until it just starts to smoke, then lower the heat to medium-high. Fry the peanuts for 20 seconds, then the curry leaves and dry red chillies for 10 seconds. Lift them out and keep aside.
Deep fry the potatoes in small batches, stirring gently, for 4 to 5 minutes each until the bubbling slows and they turn light golden and crisp. Drain on a sieve. They crisp up more as they cool.
Mix the salt, black salt, chaat masala and red chilli powder. Just before serving, sprinkle it over the potatoes and toss with the fried peanuts, curry leaves and chillies. Serve with rice and dal.
