Cookd masalas for fish
Method
Clean the fish and check it for bones. Wash and peel the potatoes, then cut them into cubes. Wash and chop the curry leaves, onions, green chillies and coriander leaves. Wash and shred the lettuce, slice the tomatoes, cut the remaining onion into rings and halve the buns. Whisk the eggs in a shallow bowl.
Add the potato cubes and 750 ml water to a kadai. Boil on medium-high flame for 12 to 15 minutes until the potato is soft when pierced. Drain, cool enough to handle and mash without lumps.
Add the fish, 150 ml water, salt and turmeric powder to a kadai. Cover and cook on medium flame for 8 to 10 minutes until the fish is opaque and flakes easily. Drain any extra water, cool the fish and remove any remaining bones.
Heat 1 tablespoon oil in the same kadai on medium flame for 1 minute until hot. Add the mustard seeds and let them splutter for about 30 seconds. Add the curry leaves, chopped onion and green chilli, then fry for 4 to 5 minutes until the onion is light golden. Add the ginger garlic paste, chilli powder, pepper powder and salt, and fry for 2 minutes until the raw smell goes. Mix in the potato, fish, coriander leaves and lemon juice, then cook for 2 minutes until the mixture is dry.
Transfer the mixture to a plate and cool it until it is easy to handle. Divide it into 4 portions and shape each one into a thick patty. Dip each patty in the whisked egg, then coat all sides with breadcrumbs and press gently so the coating sticks.
Heat 4 tablespoons oil in a flat kadai on medium flame for 2 minutes until hot. Shallow-fry the patties for 4 to 5 minutes on each side. Turn them carefully and cook until both sides are golden and the centres are hot.
Heat a tawa on medium flame for 1 minute until hot. Toast the cut sides of the buns for 1 to 2 minutes until lightly crisp. Spread mayonnaise on the buns, then add the lettuce, tomato and onion rings.
Place one hot fish patty in each bun. Close the burgers and serve immediately.
