  3. 3

Pour into a heavy non-stick pan. Cook on medium-low heat for 10 to 12 minutes, stirring all the time, until it turns thick, smooth and glossy. To test, spread a little on a plate and wait 1 minute: if it rolls up easily, it is done.

  4. 4

Working fast, spread the hot batter very thin over the greased plates with a flat spatula. Leave it to set for 5 minutes.

  5. 5

Cut into 2-inch wide strips. Roll each strip up tightly from one end and place the rolls on a serving plate.

  6. 6

Heat 2 tbsp oil in a small pan. Add mustard seeds. When they splutter, add sesame seeds, curry leaves, green chilli and a pinch of asafoetida. Fry for 1 minute and pour over the rolls.
