Cookd masalas for eggs
Method
Boil the eggs in the water for 10 minutes until hard. Cool in cold water, peel and make 3 or 4 shallow slits on each egg.
Heat 1 tbsp oil in a kadai. Add the eggs, half the red chilli powder, half the turmeric powder and a pinch of the salt. Fry on medium flame for 3 to 4 minutes, turning, until the eggs blister. Take them out.
Heat 2 tbsp oil in the same kadai. Add the cumin, curry leaves and green chilli and fry for 30 seconds. Add the onion and fry for 6 to 7 minutes until golden.
Add the ginger garlic paste and fry for 1 minute. Add the tomato and the rest of the salt and cook for 3 minutes until soft.
Add the rest of the red chilli powder and turmeric, the coriander powder, garam masala and black pepper powder. Fry on low flame for 1 minute, stirring so the spices do not burn.
Add the fried eggs and toss on low flame for 4 to 5 minutes until the masala is dry and coats the eggs. Mix in the coriander leaves. Serve hot with rice and rasam or dal.
