Method
Sort the horse gram and remove any stones. Remove the stems from the dry red chillies. Wash the curry leaves and pat them completely dry.
Place a dry kadai on low flame. Add the horse gram and roast for 8 to 10 minutes, stirring often, until it becomes slightly darker, starts to pop, and smells roasted.
Add the dry red chillies, coriander seeds, cumin and peppercorns. Roast on low flame for 2 to 3 minutes until the chillies are crisp and the spices smell roasted. Transfer everything to a plate.
Add the urad dal, chana dal, curry leaves and asafoetida to the kadai. Roast on low flame for 2 to 3 minutes until the dals are golden and the curry leaves are crisp. Turn off the flame.
Cool all the roasted ingredients for 12 minutes until they reach room temperature. Add them to a mixie with the salt and grind to a slightly coarse powder. Stop grinding before the podi becomes warm or oily.
Store the podi in a clean, dry jar after it is completely cool. Serve with hot rice, idli or dosa.
