Cookd masalas for yellow pumpkin
Method
Peel the potato, pumpkin, sweet potato and raw banana. Cut all the vegetables into 2 cm pieces of about the same size. Keep the brinjal and raw banana pieces in water until you use them.
Heat the mustard oil in a wide kadai on high flame until it smokes lightly, then lower the flame to medium. Drain the brinjal and raw banana, fry them for 5 minutes until light golden and take them out on a plate.
In the same oil, add the dry red chillies, bay leaves, mustard seeds, cumin seeds, fennel seeds, fenugreek seeds and kalonji. Fry for 30 seconds until they crackle. Add the ginger paste and fry for 1 minute.
Add the potato and fry for 4 minutes. Add the pumpkin and sweet potato and fry for 3 minutes more.
Add the cauliflower and beans, then the turmeric powder, salt and sugar, and mix. Sprinkle 60 ml water, cover and cook on low flame for 12 minutes, stirring gently every 4 minutes, until the vegetables are soft but still hold their shape.
Add the grated coconut, the fried brinjal and raw banana and the slit green chillies. Mix gently, cover and cook for 5 minutes.
Switch off the flame, add the ghee, cover and let it rest for 5 minutes. Serve warm with khichuri, or with rice and dal.
