Cookd masalas for maida
Method
Add maida and salt to a wide bowl. Pour in the water little by little and knead into a soft dough. Add oil and knead for 5 minutes until the dough is smooth and not sticky.
Cover the dough and rest it for 20 minutes. It should feel soft when pressed.
Divide the dough into about 12 equal balls. Use a little of the frying oil to roll each ball into a small, even circle about 10 cm wide. Keep the rolled luchi covered so it does not dry.
Heat the remaining oil in a kadai on medium flame for 4 to 5 minutes. Drop in a small piece of dough; it should rise to the surface at once and bubble steadily.
Slide one rolled luchi into the hot oil and deep fry it. Press it gently with a slotted spoon, then fry for 30 to 40 seconds until puffed and set but not browned. Flip and fry for 20 to 30 seconds until set with no raw patches, then drain; one luchi takes about 1 minute.
Repeat with the rest of the rolled luchi. Keep the fried luchi covered and serve hot.
