Cookd masalas for fish
Method
Get ready by rinsing the fish well and draining all the water. Cut it into thick steaks if needed. Finely chop the onion and coriander leaves, roughly chop the ginger, peel the garlic, and keep the kokum ready.
Mix the fish with salt and turmeric powder in a bowl. Keep it covered for 25 minutes so the seasoning reaches the fish.
While the fish marinates, soak the dry red chillies in hot water for 20 minutes until soft. Drain the chillies before grinding.
Dry roast the coriander seeds, cumin, fennel seeds, peppercorns, cinnamon, cloves and bay leaf in a small kadai on low flame for 3 to 4 minutes until the spices are lightly roasted. Cool for 5 minutes, then grind with the soaked chillies, grated coconut, ginger, garlic, raw rice and water to a smooth paste.
Heat oil in a wide kadai on medium flame. Fry the onion for 4 to 5 minutes until light golden and soft. Add the ground coconut paste and fry for 3 minutes until its raw smell goes.
Add kokum, water and the remaining salt. Bring the gravy to a boil, then simmer it for 5 minutes until the kokum softens and the gravy looks slightly thicker.
Slide the marinated fish pieces into the boiling gravy. Cook on low flame for 7 to 8 minutes until the fish is opaque, firm and flakes easily. Gently shake the kadai once or twice instead of stirring hard. Pour in the coconut milk and heat for 1 minute without boiling.
Switch off the flame and add coriander leaves. Cover and rest the curry for 5 minutes so the flavours blend before serving.
