Cookd masalas for fish

Method

  1. 1

Get ready by cleaning the fish and cutting it into medium pieces. Pat the pieces dry. De-stem the chillies, grate the coconut, peel the garlic and ginger, and cut the lemon into wedges. Soak the tamarind in the measured water for 10 minutes until soft, then squeeze out the pulp and discard the seeds and fibre.

  2. 2

Roast the dry red chillies, coriander seeds, cumin, peppercorns and grated coconut in a dry kadai on low flame for 3 to 4 minutes. Stir often until the coconut is lightly golden. Cool the mixture for 5 minutes until warm.

  3. 3

Grind the roasted mixture with the garlic, ginger and the tamarind pulp with its water until smooth. Mix the masala with the fish, salt and turmeric until every piece is coated. Marinate for 30 minutes.

  4. 4

Heat the coconut oil in a kadai on medium flame for 2 minutes. Place half the fish pieces without crowding them and fry for 4 to 5 minutes on each side. Turn once and cook until the flesh is opaque at the centre and flakes easily, and the masala is deep red-brown and lightly crisp. Fry the second batch the same way.

Drain the fish on a plate and rest it for 2 minutes. Serve hot with the lemon wedges.
