Method

  1. 1

Wash the carrot, capsicum, green chilli and coriander leaves. Peel the onion and carrot, and remove the seeds and stalks from the capsicum and green chilli. Chop the onion, green chilli, curry leaves and coriander leaves finely, and cut the carrot and capsicum into small dice. Warm the milk on low flame for 1 to 2 minutes until lukewarm, not hot.

  2. 2

Mix the maida, yeast, sugar and salt in a bowl. Add the warm milk, oil and water gradually. Knead for 8 to 10 minutes until the dough is soft and slightly sticky.

  3. 3

Cover the bowl and keep it in a warm place for 60 minutes. Let the dough rise until doubled in size.

  4. 4

Heat the oil in a kadai on medium flame for 1 minute until hot. Add the cumin and fry for half a minute until it sizzles, then add the onion, green chilli and curry leaves and fry for 3 to 4 minutes until the onion is soft. Add the carrot, capsicum, salt, red chilli powder and pepper powder, and cook for 4 to 5 minutes until the vegetables are just soft and the raw smell goes. Mix in the coriander leaves and switch off the flame.

  5. 5

Spread the filling on a plate and cool it for 10 minutes until it is no longer warm. Press down the risen dough and divide it into 8 equal portions.

  6. 6

Flatten each dough portion, place some filling in the centre and close it well. Shape it into a smooth ball and place it on a baking tray greased with a little oil. Cover the buns and let them rise for 30 minutes until slightly puffy.

  7. 7

Preheat the oven at 180°C for 10 minutes until it reaches the set temperature. Brush the buns lightly with the remaining oil. Bake at 180°C for 18 to 22 minutes until the tops are golden and the buns sound hollow when tapped.

  8. 8

Cool the buns for 10 minutes before serving, until they are warm but not hot.
