Method

  1. 1

Get ready: Wash the bajji chillies and wipe them fully dry. Slit each chilli lengthwise without cutting it fully through, and remove some seeds if you want less heat. Mix the besan flour, rice flour, salt, red chilli powder, turmeric powder and ajwain in a bowl.

Add the Water little by little and whisk to make a thick, smooth batter. Rest it for 5 minutes. The batter is ready when it coats the back of a spoon.

  3. 3

Heat the Oil in a kadai on medium flame for 4 to 5 minutes. Drop in a little batter; the oil is ready when the batter rises slowly with small bubbles without turning dark at once.

Dip each chilli in the batter until fully coated. Deep fry 3 to 4 chillies at a time on medium flame for 3 to 4 minutes, turning them, until the coating is crisp and golden. Remove with a slotted spoon, drain, and repeat with the remaining chillies and batter. This makes 8 bajjis; serve them hot with chutney and tea.
