Method
Remove the hard outer layers and florets from the banana blossom. Chop the tender part finely and soak it in 1 litre water with 1 teaspoon salt for 15 minutes. Peel and cut the potatoes, grate the ginger, chop the green chillies and coriander leaves, and crush the cumin.
Bring 750 ml water to a boil on high flame for 5 to 7 minutes until bubbling. Add the potato cubes and boil on medium flame for 12 to 15 minutes until a fork enters them easily. Drain and mash them well.
Drain and rinse the banana blossom. Add it to a kadai with 750 ml water and turmeric. Boil on medium flame for 20 minutes until soft. Drain well and squeeze out the extra water.
Heat the mustard oil in the kadai on medium flame for 1 minute until hot. Add cumin, ginger and green chilli, and fry for 1 minute until the raw smell goes. Add the banana flower, mashed potato, roasted peanuts, coriander powder, red chilli powder, garam masala, sugar and salt, then cook for 6 to 8 minutes until dry. Mix in the coriander leaves, spread the mixture on a plate and cool it for 10 minutes until safe to handle.
Mix maida, salt and 80 ml water in a bowl to make a smooth, thin batter. Divide the cooled mixture into 10 portions and shape each portion into a small oval.
Coat 3 to 4 shaped chops in the maida batter, then roll them in breadcrumbs until fully covered. Heat 500 ml oil for deep frying in a kadai on medium flame for 5 to 7 minutes until a breadcrumb rises and sizzles. Fry one batch for 3 to 4 minutes, turning gently, until golden and crisp. Drain and repeat with the remaining chops, about 3 batches in all, then serve hot with tea or chutney.
