Method

  1. 1

Get ready by washing the green chillies well. Spread them on a clean cloth and air-dry for 60 minutes until there is no water on the skin. Slit each chilli lengthwise without cutting it into two pieces.

  2. 2

Mix the sour curd, water and salt in a clean bowl for 2 minutes until the salt dissolves. Add the slit chillies and press them under the curd mixture. Cover and keep in the refrigerator for 12 hours until the chillies soften and absorb the sour liquid.

  3. 3

Lift the chillies from the curd mixture and spread them on a clean, dry tray. Cover and refrigerate the curd mixture for the next soaking. Dry the chillies in strong sunlight for 10 hours, turning them once or twice, until the outside is shrivelled but the chillies are still slightly soft.

  4. 4

Put the sun-dried chillies back into the reserved curd mixture. Cover and keep in the refrigerator for 12 hours until the chillies look plump and have absorbed the mixture again.

  5. 5

Spread the chillies on a clean, dry tray in strong sunlight for 2 days, bringing them indoors at night. Dry until they are fully shrivelled, crisp and moisture-free when pressed. Cool for 10 minutes, then store in a clean, dry airtight container.

  6. 6

Heat oil in a small kadai on medium flame for 2 minutes until it shimmers. Fry 4 to 6 dried chillies for 30 to 60 seconds until crisp and dark brown, then remove and serve at once. Repeat with the remaining chillies in batches only when needed; this makes about 16 to 20 dried chillies.
