Method
Get ready by washing the tomatoes, green chillies, curry leaves and coriander leaves. Peel and finely chop the onions and garlic, chop the tomatoes and coriander leaves, and slit the green chillies. Pat the curry leaves dry so they do not splutter in hot oil.
Boil the eggs in water with salt on medium heat for 10 minutes, until the yolks are firm. Drain and cool them under cold running water until safe to handle. Peel the eggs and make two small cuts on each one.
Heat oil in a kadai on medium heat for 1 minute until hot. Add turmeric and the peeled eggs. Fry for 2 to 3 minutes, turning gently, until they have a light golden coating, then remove them.
Add mustard seeds and cumin to the same kadai and fry on medium heat for 1 minute, until the mustard splutters. Add curry leaves, onion, green chilli and garlic. Fry for 7 minutes, until the onion is golden and the raw smell of garlic is gone.
Add tomato, red chilli powder, coriander powder, turmeric powder and salt. Cook on medium heat for 6 to 8 minutes, stirring often, until the tomatoes are soft and oil shows at the sides.
Pour in water and mix well. Simmer on medium heat for 5 minutes, until the gravy thickens slightly and the raw smell of the spices is gone. Add the fried eggs and garam masala powder, then simmer for 7 to 8 minutes until the eggs are coated with the gravy.
Turn off the flame and mix in the coriander leaves. Rest the curry for 2 minutes, then serve hot with rice or chapati.
