Method
Get ready by peeling and finely chopping the onions. Rinse the green chillies, curry leaves and coriander leaves. Slit the green chillies, chop the curry leaves and coriander leaves, then crack the eggs into a bowl and whisk them with 30 ml water. Pat the curry leaves dry so they do not splutter in hot oil.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and cumin, and fry for half a minute until the mustard seeds splutter. Add curry leaves and green chilli, and fry for 1 minute until the curry leaves turn crisp.
Add the onion and ½ teaspoon salt. Fry on medium flame for 4 to 5 minutes until the onion turns soft and light golden.
Add turmeric powder and red chilli powder. Mix and fry on low flame for half a minute until the raw smell goes.
Pour in the whisked eggs and add the remaining salt. Cook on low flame for 3 to 4 minutes, stirring gently and often, until the eggs are fully set and no liquid remains.
Add coriander leaves and mix. Cook for 1 minute until the scramble is dry, then switch off the flame.
