Cookd masalas for eggs
Method
Get ready by chopping the onion and green chillies. Grate the coconut and remove the curry leaves from the sprig. Crack the eggs into a bowl, add the salt and whisk until mixed.
Add the grated coconut, green chillies, cumin and turmeric powder to the egg bowl. Mix well until the coconut and spices are evenly spread through the eggs.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for 30 seconds until they splutter. Add curry leaves and fry for 30 seconds until they stop crackling.
Add the onion and the remaining salt. Saute on medium flame for 4 to 5 minutes until the onion turns soft and lightly golden.
Pour in the egg and coconut mixture. Stir on medium flame for 3 to 4 minutes, breaking the eggs into small pieces, until the eggs are fully cooked and dry with no liquid left.
