Method
Get ready: Remove the stems from the dry red chillies. Peel the garlic.
Roast the peanuts in a dry kadai on medium flame for 5 to 6 minutes. Stir often until the skins loosen and the peanuts turn lightly golden. Transfer them to a plate.
Add the chana dal, urad dal, cumin and dry red chillies to the same kadai. Roast on low flame for 3 to 4 minutes, stirring until the dals turn golden and the chillies become crisp without burning. Transfer them to the same plate.
Roast the garlic in the kadai on low flame for 1 to 2 minutes. Turn it often until the raw smell goes and small golden spots appear. Add it to the plate and cool all the roasted ingredients for 5 minutes.
Grind the roasted dals, cumin, chillies, garlic and salt in a mixie until coarse. Add the peanuts and pulse 5 to 6 times until the podi is crumbly, with no large peanut pieces. Do not grind continuously, as it may become a paste.
Spread the podi on a plate and cool it fully for 5 minutes before storing. Serve it with hot rice and ghee, or with idli and dosa.
