Method
Grate the jaggery and reserve 2 tbsp wheat flour for dusting. Add the remaining flour, salt and 1.5 tbsp oil to a bowl. Add water little by little and knead for 5 minutes until the dough is soft and smooth. Coat it with the remaining 0.5 tbsp oil, cover and rest for 30 minutes.
Dry-roast the peanuts in a kadai on low flame for 5 to 7 minutes until lightly golden and the skins loosen. Cool them until they are easy to handle, then rub off the skins. Grind the peanuts to a slightly coarse powder.
Add the jaggery and water to the kadai and cook on medium flame for 3 to 4 minutes until the jaggery dissolves. Strain it through a metal strainer and return it to the kadai. Add the cardamom powder and ground peanuts. Stir on medium flame for 4 to 5 minutes until the filling becomes thick and leaves the sides of the kadai.
Cool the filling for 15 minutes until it is warm enough to handle. Divide it into 8 equal portions and roll them into balls. Divide the dough into 8 balls.
Use the oil little by little to grease your hands. Flatten one dough ball, place one filling ball in the centre and bring the edges over it. Seal it well and flatten it gently without letting the filling come out.
Dust the filled dough lightly with the reserved wheat flour and roll it into a thin poli. Shape and roll the remaining dough and filling in the same way.
Heat a tawa on medium flame for 2 minutes until hot. Use the cooking oil little by little to grease the tawa. Cook each poli for 1 minute on each side until light brown spots appear and no raw dough is visible. Cook all 8 polis in the same way and serve warm.
