Method
Slice the onions thinly. Chop the green chillies and coriander leaves finely. Keep them ready for mixing.
Mix the onion, green chilli, coriander leaves and salt in a bowl. Rub them together for 2 minutes until the onion softens and releases some moisture.
Add the besan flour, rice flour, red chilli powder, turmeric powder and cumin. Sprinkle the water little by little and mix until the onion is coated with a thick, sticky mixture. This mixture makes about 16 fritters.
Heat the oil for deep frying in a kadai on medium flame for 4 to 5 minutes. Drop a small bit of the mixture into the oil; it should rise slowly with steady bubbles.
Drop small portions of the mixture into the hot oil without crowding the kadai. Fry the mixture in 3 batches, cooking each batch for 3 to 4 minutes, turning once or twice, until the fritters are deep golden and crisp. Drain them on a plate lined with paper, keeping the flame at medium.
