Method

  1. 1

Powder the jaggery until no large lumps remain. Keep a bowl of water ready for testing the syrup. Use a little ghee to grease a wide plate and spoon. Keep a little aside for your palms and use the rest for roasting.

  2. 2

Heat a kadai on low flame and add the roasted gram and the ghee kept for roasting. Roast for 3 to 4 minutes until the gram is warm and lightly crisp. Transfer it to a wide bowl.

    Roasted Gram

  3. 3

Add the jaggery and the water to the same kadai. Melt on medium flame for 4 to 5 minutes until the jaggery dissolves fully. Strain the syrup into a bowl to remove any dirt.

    Water

  4. 4

Return the syrup to the kadai and cook on medium flame for 5 to 7 minutes. Drop a little syrup into the bowl of water and let it cool for a few seconds. Lift it from the water and check that it forms a firm ball that does not flatten when pressed.

  5. 5

Add the cardamom powder to the hot syrup. Pour the syrup over the roasted gram and mix quickly with the greased spoon. Mix until every gram is coated and the mixture starts holding together. Leave it for 1 to 2 minutes until it is safe to handle but still warm.

    Cardamom Powder

  6. 6

Grease your palms with the ghee kept aside. Take small portions and roll them into tight balls while the mixture is still warm. Place them on the greased plate and cool for 20 minutes until firm.
