Method
Get ready. Wash the raw papaya and green chilli. Rinse the curry leaves and pat them dry. Peel the papaya, remove the seeds and cut it into small cubes. Peel and finely chop the shallots, slit the green chilli, and halve the dry red chilli.
Heat oil in a kadai on medium flame for 1 minute, until hot. Add mustard seeds, urad dal, dry red chilli and curry leaves. Fry for 1 to 2 minutes, until the mustard seeds splutter and the dal turns light golden.
Add the shallots and green chilli. Saute on medium flame for 3 to 4 minutes, until the shallots turn soft and lightly golden.
Add the raw papaya, turmeric powder, salt and water. Mix well and cover the kadai.
Cook on low flame for 8 to 10 minutes, stirring once or twice, until the papaya is cooked through but still holds its shape. Check with a spoon; it should cut easily without becoming mushy.
Remove the lid and cook on medium flame for 2 to 3 minutes, until the extra water dries and the poriyal looks dry. Turn off the flame and serve warm.
