Method
Get ready by washing the bottle gourd, green chillies, curry leaves and coriander leaves. Peel the bottle gourd, cut it open and remove the soft centre if it has large seeds, then cut it into small cubes. Peel and finely chop the onion and garlic; slit the green chillies, pluck the curry leaves and chop the coriander leaves. Taste a tiny raw piece of bottle gourd, and discard the whole gourd if it tastes bitter. Pat the curry leaves dry so they do not splutter in hot oil.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and cumin and fry for 30 seconds until the mustard seeds pop. Add the green chillies and curry leaves and fry for 30 seconds until they sizzle.
Add the garlic and onion. Fry on medium flame for 4 to 5 minutes until the onion turns soft and light golden, and the raw smell of garlic goes.
Add turmeric powder, red chilli powder, bottle gourd and salt. Mix well and cook on medium flame for 2 minutes until the spices coat the pieces.
Cover and cook on low flame for 10 to 12 minutes. Stir once or twice until the bottle gourd is soft but still holds its shape and its water has dried. If it starts to stick, sprinkle up to 2 tablespoons of water.
Add the coriander leaves and mix. Cook uncovered on medium flame for 1 to 2 minutes until the curry is dry, then switch off the flame.
