Cookd masalas for dried white peas

Soak the white peas in water overnight, for at least 8 hours.

Add it to a pressure cooker along with potato, salt, turmeric powder and water.

Pressure cook for 5 whistles on medium heat. Mash it partly, leaving some peas whole too

Heat oil in a pan and add the fennel seeds, cumin seeds and cinnamon.

Add the onion and saute until it turns translucent. Add the ginger-garlic paste and saute for 2 minutes to remove the raw taste.

Add the tomatoes and saute until it turns mushy. Add the mint and coriander leaves, mix and turn off the heat.

Cool down the mixture and grind it into a paste.

Heat oil in a pan. Over low flame, add all the spice powders.

Add the masala paste and cook until the raw taste goes away, around 4 minutes.

Add the cooked peas mixture and simmer for 4 minutes. Add salt, water if needed and cook till the desired consistency is reached.

Crush the Puris and place them on the plate. Pour the peas over it. Top it with the onion, tomato, chutneys, chaat masala, sev and coriander leaves.
