Method
Finely chop the onion, green chillies and coriander leaves. In a big bowl, mix the jowar, bajra, wheat and rice flours with the besan. Add the onion, green chillies, coriander leaves, ginger garlic paste, turmeric powder, red chilli powder, coriander powder, cumin, ajwain, sesame seeds and salt. Rub well with your hands.
Add the water little by little and knead to a soft, slightly sticky dough. Cover and rest it for 10 minutes.
Divide the dough into 8 balls. Grease a sheet of butter paper or a plastic sheet with oil. With wet fingers, pat one ball into a thin round of about 6 inches. Make 4 or 5 small holes in it with your finger.
Heat a tawa on medium flame. Turn the thalipeeth onto the tawa and peel off the sheet. Pour a few drops of oil into each hole and around the edge. Cover and cook for 3 minutes until the bottom is golden and crisp.
Flip it and cook without the lid for 2 minutes until golden spots show. Make the rest the same way.
Serve hot with curd, a little butter or pickle.
