Method
Get ready by measuring the grated coconut, urad dal, dry red chillies, tamarind and salt. Keep a mixie jar ready.
Heat oil in a small kadai on low flame for 1 minute. Add urad dal, dry red chillies and asafoetida. Roast for 4 to 5 minutes, stirring often, until the dal is golden and the chillies turn crisp. Remove everything to a plate.
Cool the roasted ingredients for 5 minutes until they are no longer hot. This keeps the coconut from turning oily while grinding.
Add the cooled roasted ingredients, grated coconut, tamarind, salt and water to the mixie jar. Grind for 1 to 2 minutes to a thick, slightly coarse paste; do not add extra water unless needed for the blades to move.
Serve the thogayal with hot rice and kuzhambu. Refrigerate any leftover thogayal within 2 hours.
