Method
Get ready by rinsing the chana dal and soaking it in 100 ml water for 30 minutes. Drain it well. Rinse the green chillies and curry leaves, then chop the chillies finely and keep the rice rava ready.
Heat 2 tsp oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and cook for 30 seconds until they splutter. Add the cumin, drained chana dal, green chilli, curry leaves and asafoetida. Fry for 1 to 2 minutes until the dal is lightly golden.
Pour in 650 ml water and add the salt. Bring to a boil on medium flame, then simmer for 8 to 10 minutes until the chana dal is partly tender when pressed.
Lower the flame and add the rice rava slowly while stirring. Stir for 2 to 3 minutes until no dry rava remains and the mixture becomes thick. Cover and cook on low flame for 3 to 4 minutes until the rava absorbs the water and leaves the sides of the kadai.
Turn off the flame and cool the mixture for about 8 minutes until it is warm enough to handle. Grease your palms and the idli plates with 1 tsp oil. Knead the mixture lightly and shape it into small, smooth balls without cracks.
Pour 800 ml water into a steamer. Boil it on high flame for 5 to 7 minutes until the water bubbles well.
Place the rice balls on the greased idli plates with space between them. Steam on medium flame for 10 to 12 minutes until the outside is firm and no longer sticky. Rest them for 2 minutes before serving.
