Method
Get ready: Wash and peel the potatoes. Finely chop the shallots, deseed and slit the green chillies, and wash the curry leaves.
Add the potatoes, 1/2 tsp salt and cooking water to a pressure cooker. Pressure cook on medium flame for 3 whistles, about 10 to 12 minutes. Let the pressure release for about 10 minutes, then open the cooker after the pressure pin drops. The potatoes should be soft when pierced with a fork.
Drain the potatoes and mash them while they are warm. Keep the mash slightly coarse so the side holds its shape.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and urad dal. Fry for 1 to 2 minutes until the mustard splutters and the dal turns light golden.
Add the shallots, green chillies and curry leaves. Fry on medium flame for 4 to 5 minutes until the shallots are soft and lightly golden. Add the turmeric powder and cook for 1 minute until the raw smell goes.
Add the mashed potatoes and the remaining 1/2 tsp salt. Mix well and add up to 60 ml water if needed. Cook on low flame for 3 to 4 minutes until the water is absorbed and the mash is hot and dry.
