Method
Peel and rinse the raw bananas. Slice them into even rounds or long slices, about 3 to 4 mm thick. Keep the slices in the rinsing water so they do not darken.
Add besan flour, rice flour, red chilli powder, turmeric powder, asafoetida and salt to a bowl. Pour in the mixing water little by little, stopping once the batter is smooth and thick enough to coat the slices. Drain the banana slices and pat them dry with a clean cloth so the oil does not splutter.
Heat the oil in a kadai on medium flame for 4 to 5 minutes. Drop in a little batter; the oil is ready when it rises slowly with small bubbles without turning dark at once.
Dip the banana slices in the batter and coat them fully. Slide them gently into the oil in 3 batches without crowding the kadai. Fry each batch on medium flame for 5 minutes, turning once halfway, until the coating is golden and the banana is soft inside. Remove with a slotted spoon and drain before serving hot.
