Method
Wash the long beans and curry leaves. Cut the beans into small pieces. Peel and chop the shallots, peel and crush the garlic, slit the green chillies, and lightly crush the cumin with the grated coconut.
Heat coconut oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for half a minute until they crackle. Add the broken dry red chillies, curry leaves, shallots, garlic and green chillies, then fry for 3 to 4 minutes until the shallots are soft and lightly golden and the raw smell of garlic is gone.
Add the chopped beans, turmeric powder and salt. Pour in the water, mix well and cover the kadai. Cook on medium flame for 8 to 10 minutes until the beans are tender but not mushy.
Add the grated coconut and crushed cumin. Mix gently and cook uncovered on low flame for 4 to 5 minutes, stirring once or twice, until the coconut is heated through and the thoran is dry. Turn off the flame and serve warm.
