Method
Get the vegetables ready. Wash, peel and cut the potatoes into medium cubes. Peel and finely chop the onions; wash and chop the tomatoes and coriander leaves. Wash the curry leaves and slit the green chillies. Pat the curry leaves dry so they do not splutter in hot oil.
Add the potatoes to a saucepan with 500 ml water and 1 tsp salt. Boil on medium heat for 10 to 12 minutes, until a knife goes in easily but the cubes still hold their shape. Drain and keep aside.
Heat oil in a kadai on medium heat for 1 minute until hot. Add mustard seeds and cumin, and fry for 30 seconds until the mustard seeds pop. Add curry leaves and green chilli, and fry for 30 seconds until the leaves stop crackling.
Add the onion and ½ tsp salt. Fry on medium heat for 5 to 6 minutes, stirring often, until the onion turns light golden and soft.
Add ginger garlic paste, tomatoes, turmeric powder, red chilli powder and coriander powder. Cook on medium heat for 6 to 8 minutes, until the tomatoes become soft and the raw smell goes.
Add the boiled potato and 300 ml water. Mix gently and simmer on low heat for 7 to 8 minutes, until the gravy thickens and coats the potato.
Add coriander leaves and mix once. Cook on low heat for 1 minute, until the leaves wilt and the gravy bubbles. Switch off the heat.
