Method

  1. 1

Get ready by washing, peeling and removing the seeds from the ash gourd. Cut it into small cubes. Peel and finely chop the shallots, slit the green chillies, wash the curry leaves and grate the coconut. Pat the curry leaves dry so they do not splutter in hot oil.

  2. 2

Heat the oil in a kadai over medium flame for 30 seconds until hot. Add the mustard seeds and fry for 30 seconds until they splutter. Add the urad dal, curry leaves and green chillies, and fry for 1 minute until the dal turns light golden.

  3. 3

Add the chopped shallots and fry on medium flame for 3 to 4 minutes until they turn soft and light golden.

    Small Onion (Shallots)

  4. 4

Add the ash gourd, turmeric powder and salt. Mix well, cover and cook on medium flame for 8 to 10 minutes until the ash gourd is soft but still holds its shape. Sprinkle 1 to 2 tbsp water only if it starts sticking.
