Method

  1. 1

Get ready by finely chopping the onion, ginger, green chillies and coriander leaves. Wash the curry leaves and pat them dry well.

  2. 2

Pressure cook the whole potatoes with 500 ml water for 2 whistles, about 8 minutes, until fork-tender. Let the pressure release naturally for about 10 minutes until the cooker pin drops, then drain off any water left.

  3. 3

Cool the potatoes for 2 to 3 minutes until safe to handle. Peel and cut them into medium cubes.

  4. 4

Heat oil in a kadai on low-medium flame for 1 minute. Add mustard seeds, cumin and urad dal; fry for 1 minute until the mustard crackles and the dal turns golden. Add onion, ginger, green chilli, curry leaves and asafoetida; cook for 4 to 5 minutes until the onion is soft but not brown. Add turmeric and stir for 20 seconds until the raw smell goes.
