Method
Wash the brinjals and cut them lengthwise into 12 to 16 thin, even slices. Keep the slices ready for dipping.
Add besan flour, rice flour, salt, turmeric powder, red chilli powder and kalonji to a bowl. Add the water little by little and whisk to a smooth, thick batter. The batter should coat the back of a spoon without running off quickly.
Sprinkle the brinjal slices with salt. Dip enough slices for one batch in the batter and coat both sides fully.
Heat the oil for deep frying in a kadai on medium flame for 4 to 5 minutes. Drop a little batter into the oil; it should rise slowly with small bubbles.
Fry 4 to 5 coated slices at a time on medium flame for 3 to 4 minutes until the coating is crisp and golden and the brinjal is soft inside. Turn them once halfway, then remove them with a slotted spoon. Coat and fry the remaining slices in the same way, about 4 batches in all.
Drain each batch on a plate lined with paper for 1 to 2 minutes. Serve hot.
