Method
Boil the baby potatoes in 1 litre water with 1 tsp of the salt for 12 minutes, until just cooked but still firm. Drain, cool and peel them.
Puree the tomato. In a bowl, whisk the curd with the Kashmiri chilli powder, turmeric powder and cumin powder.
Heat the mustard oil in a kadai until it smokes lightly, then lower the flame. Add the bay leaves, dry red chillies, cinnamon, cloves and cardamom, then the cumin seeds and asafoetida. Add the ginger paste and stir for 30 seconds.
Add the tomato puree and cook on medium flame for 2 to 3 minutes until the raw smell goes.
Turn the flame to the lowest. Add the spiced curd and stir all the time for 2 minutes so it does not split.
Add the potatoes, the rest of the salt, the sugar and 150 ml warm water. Mix, cover and cook on low flame for 10 minutes, until the potatoes soak up the masala and the gravy turns thick.
Add the slit green chillies, garam masala and ghee, mix and switch off the flame. Serve hot with luchi, kochuri or radhaballavi.
