Cookd masalas for chana dal
Method
Rinse the chana dal 2 or 3 times and soak it in the water for 30 minutes. Drain. Peel the bottle gourd, remove any hard seeds and cut it into 1-inch pieces. Taste a small piece of the raw bottle gourd first; do not use it if it is bitter.
Heat the oil in a pressure cooker on medium heat. Add 1 tsp cumin and the asafoetida, then the ginger garlic paste and green chillies, and fry for 30 seconds. Add the onion and fry for 4 minutes until light brown. Add the tomato and cook for 3 minutes until soft.
Add the turmeric powder, red chilli powder, coriander powder, bottle gourd, chana dal, salt and the water for cooking. Mix and pressure cook on medium heat for 3 whistles, about 12 minutes. Let the pressure drop by itself.
Open the cooker and stir gently so the bottle gourd keeps its shape. Add the garam masala, lemon juice and coriander leaves.
Heat the ghee in a small pan on medium heat for 1 minute. Add 1/2 tsp cumin and let it splutter for 10 seconds, then turn off the heat and add a pinch of red chilli powder. Pour this over the dal. Serve hot with roti or rice.
