Cookd masalas for chicken
Method
Get ready by rinsing the rice well. Clean the chicken pieces, chop the onion, tomato, ginger and garlic, slit the green chillies, and wash the curry leaves. Pat the curry leaves dry before using.
Heat coconut oil in a pressure cooker on medium flame for 1 minute. Add cinnamon, cardamom, cloves and crushed peppercorns. Add onion, ginger, garlic, green chillies and curry leaves; fry for 5 to 6 minutes until the onion turns soft and light golden. Add tomato and cook for 2 minutes until it softens.
Add chicken, rinsed rice, turmeric powder, salt and water. Stir well and close the cooker. Pressure cook on medium flame for 4 whistles, until the rice is very soft and the chicken flesh near the bone is no longer pink.
Switch off the flame and let the pressure release naturally for about 10 minutes. Open the cooker, take out the chicken pieces, remove and discard the bones, then shred the chicken. Mash the soft rice lightly with the back of a ladle and stir the shredded chicken back in.
Add coconut milk and stir on low flame for 4 minutes until the kanji is hot and creamy. Keep stirring so it does not stick to the bottom; do not boil it hard.
Add black pepper powder and coriander leaves. Stir on low flame for 1 minute until combined, then serve hot.
