Method
Grate the coconut and powder the jaggery. Keep them ready for the filling.
Add the maida and salt to a bowl. Pour in the kneading water little by little and make a soft dough. Add 1.5 tbsp oil and knead for 3 to 4 minutes until the dough is smooth and slightly loose.
Cover the bowl and rest the dough for 30 minutes until it is soft and stretchy. Make and cool the filling during this resting time.
Add the grated coconut, powdered jaggery and cooking water to a kadai. Cook on medium flame for 5 to 7 minutes, stirring often, until the jaggery melts and the mixture becomes thick.
Add the cardamom powder and mix well. Cook on medium flame for 2 to 3 minutes until the filling leaves the sides of the kadai. Spread it on a plate and cool for 15 minutes until it is no longer hot, then divide it into 8 equal balls.
Grease your hands with a little of the reserved oil. Divide the dough into 8 balls, place one filling ball inside each portion and seal it fully. Finish all 8 in about 10 minutes.
Grease two sheets or a flat surface with the remaining reserved oil. Flatten one filled ball gently into a thin round poli, about 5 to 6 inches wide, without letting the filling come out. Flatten each remaining ball in the same way just before cooking it.
Heat a tawa on medium flame for 1 minute until hot and spread a little ghee. Cook each poli for 1 to 2 minutes on each side until light brown spots appear and no raw dough is seen. Cook all 8 polis for 20 to 24 minutes, adding a little ghee as needed.
