Wash and drain the ridge gourd/peerkangai skin. Heat a pan and dry roast the grated coconut.

Dry roast the ridge gourd skin, dry red chillies and dal separately.

Transfer them to a blender, add the tamarind, salt and little water. Blend it to a coarse texture. Prepare the tadka by heating oil and adding mustard, urad dal, curry leaves, dry red chillies and asafoetida. Let it crackle and immediately transfer it to the thogayal and mix till it combines.Make some crispy hot dosas and enjoy it along with some chutney
